Kafta Mixture

  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon seven spice (pre-mixed spice blend)
  • ⅛ teaspoon cayenne pepper (more to taste)

Instructions

  1. Prepare the parsley and onion: In the bowl of your food processor, add quartered onion and fresh parsley. Pulse the ingredients until they are finely chopped to release maximum flavor and create a uniform mixture.
  2. Mix the meat and spices: Transfer the finely chopped parsley and onion to a large mixing bowl with the ground beef. Add salt, black pepper, seven spice, and cayenne pepper. Thoroughly mix everything together using your hands to evenly distribute the spices and herbs throughout the meat.
  3. Form the kebabs: Take portions of the meat mixture and mold them firmly around skewers. The shaped meat should be about 1 to 1.5 inches thick surrounding each skewer to ensure even cooking and a juicy interior.
  4. Preheat the grill: Prepare your charcoal or gas grill. If using a gas grill, preheat it to medium-high heat and lightly oil the grill grates to prevent sticking.
  5. Grill the kebabs: Place the prepared kafta skewers onto the hot grill. Cook for about 4 minutes on one side until nicely browned, then carefully turn and grill the other side for an additional 4 minutes or until the meat is thoroughly cooked and juices run clear.
  6. Serve: Once cooked through, remove the kebabs from the grill and serve immediately for best flavor and juiciness.
