Ingredients

Scale

Main Ingredients

  • 4 low-carb tortillas (78 inches each)
  • 4 oz cream cheese, softened
  • 3 tbsp powdered erythritol
  • ½ tsp vanilla extract
  • 2 tbsp butter, melted
  • 3 tbsp granular erythritol
  • 1 ½ tsp ground cinnamon
  • 1 oz cream cheese, softened (for icing)
  • 1 tbsp powdered erythritol (for icing)
  • 12 tsp unsweetened almond milk (or heavy cream, for icing)

Instructions

  1. Prepare the Filling: In a small bowl, combine 4 oz softened cream cheese, 2 tbsp powdered erythritol, and ½ tsp vanilla extract. Mix with a spatula until completely smooth and free of lumps.
  2. Warm Tortillas: Gently warm low-carb tortillas in the microwave for 10-15 seconds to make them soft and pliable, preventing cracks when rolling.
  3. Assemble: Lay a tortilla flat and spread a quarter of the cream cheese filling evenly in a thin layer, leaving a ½-inch border around edges.
  4. Roll Tightly: Roll the tortilla tightly into a compact log and set aside seam-side down. Repeat with remaining tortillas.
  5. Create Cinnamon Coating: In a shallow dish, whisk together 3 tbsp granular erythritol and 1 ½ tsp ground cinnamon.
  6. Butter & Coat: Melt 2 tbsp butter. Brush the outside of each roll-up with butter and immediately roll in the cinnamon-sweetener mixture until evenly coated.
  7. Pan-Sear: Heat a non-stick skillet over medium heat. Place roll-ups seam-side down and cook 1-2 minutes per side, turning carefully, until golden brown and slightly crisp.
  8. Make Icing: While searing, mix 1 oz softened cream cheese, 1 tbsp powdered erythritol, and 1-2 tsp almond milk or heavy cream until smooth and drizzly.
  9. Serve: Remove roll-ups from skillet, drizzle with cream cheese icing immediately, and serve warm.

Notes

  • Use powdered sweeteners in filling and icing to avoid gritty texture.
  • Warm tortillas before rolling to prevent cracking.
  • Spread filling thinly to avoid soggy roll-ups.
  • Store assembled roll-ups in airtight containers for up to 4 days refrigerated or freeze cooked roll-ups up to 2 months.
  • Reheat in a dry skillet or air fryer to restore crispness.
  • Optional: Add chopped nuts or spices like nutmeg/cardamom to the filling for extra flavor.
  • You can bake instead of pan-sear by baking at 375°F (190°C) for 8-10 minutes.
