Ingredients
Scale
Gelatin Mixture
- 1 Dry Packet Sugar-Free Lemon Gelatin (0.3 oz size)
- 1/2 Cup Water
Cheesecake Fluff
- 1 Cup Heavy Whipping Cream (can substitute with 8 oz tub whipped topping if not concerned about carbs)
- 8 oz Full Fat Cream Cheese (room temperature)
Instructions
- Whip the Cream: In a stand mixer, whip the heavy cream on medium to high speed until stiff peaks form. Set aside the whipped cream carefully.
- Beat the Cream Cheese: In another mixing bowl, beat the room temperature cream cheese until it becomes soft and smooth.
- Heat the Water: Using a microwave-safe dish or Pyrex measuring cup, heat the 1/2 cup of water to boiling, approximately 1.5 minutes in the microwave.
- Dissolve the Gelatin: Pour the dry sugar-free lemon gelatin packet into the hot water and stir until it fully dissolves and the mixture is clear.
- Combine Lemon Mixture and Cream Cheese: Slowly add about half of the lemon gelatin mixture to the softened cream cheese and mix thoroughly until smooth.
- Add More Mixture and Whipped Cream: Pour in the remaining lemon gelatin mixture along with a portion of the whipped cream, and mix well to combine.
- Fold in Remaining Whipped Cream: Gently fold in the rest of the whipped cream until fully blended, taking care not to overbeat to maintain fluffiness.
- Chill to Set: Transfer the mixture into serving dishes or an airtight container and refrigerate until ready to serve, allowing the fluff to set for a few hours.
Notes
- For a lower carb option, avoid using whipped topping as a substitute for heavy cream.
- Ensure cream cheese is at room temperature to avoid lumps in the mixture.
- Do not overbeat after adding whipped cream to keep the fluff light and airy.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- This dessert requires chilling time to set properly; ideally, refrigerate for at least 2 hours before serving.
