- 3 small or medium lemons, zested (about 2 large lemons)
- 1 cup (226 g) unsalted butter, melted
- 1 large egg (US), room temperature
- 1 large egg yolk (US), room temperature
- 1 tsp (5 ml) vanilla extract
- 1 cup (105 g) fresh blueberries
- ¼ cup (50 g) granulated sugar for rolling (optional)
Instructions
- Preheat the oven and prepare the baking sheet: Preheat the oven to 375°F (190°C) and line a large baking sheet with parchment paper.
- Melt the butter: In a small bowl, melt the butter and allow it to cool in the fridge for about 10 minutes.
- Prepare the dry ingredients: In another bowl, whisk together the flour, cornstarch, baking powder, baking soda, and salt until well combined.
- Combine wet ingredients: In a large mixing bowl, whisk the sugar and lemon zest until sandy. Add the melted butter, eggs, and vanilla extract; whisk until smooth.
- Mix the batter: Stir the dry ingredients into the wet mixture until just combined. Gently fold in the blueberries.
- Scoop and shape: Use a cookie scoop to form dough balls. Optionally roll the balls in sugar before placing them on the baking sheet.
- Bake: Bake the cookies for 10-12 minutes until the edges are set and golden brown.
- Cool and enjoy: Let the cookies cool on the baking sheet for a few minutes, then transfer them to a rack to cool completely.
