  • 1/3 cup unsweetened almond milk
  • 1 Tablespoon lemon juice
  • 1 Tablespoon lemon zest
  • 2 Tablespoons melted coconut oil
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Small pinch of salt

Glaze

  • 1 1/2 Tablespoons plain dairy-free yogurt
  • 1 Tablespoon honey
  • 1 Tablespoon lemon juice
  • 1 Tablespoon lemon zest
  • 1/4 teaspoon vanilla extract
  • 3 Tablespoons unsweetened almond milk (for thinning glaze if needed)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the donuts at the right temperature.
  2. Mix Ingredients: In a medium bowl, combine all the donut ingredients. Using an electric mixer on medium/high speed, mix until the batter is fully blended, scraping down the sides as necessary to ensure an even mixture.
  3. Prepare Donut Pan: Grease a 6-hole donut pan thoroughly and spray lightly with cooking spray to prevent sticking.
  4. Fill Donut Molds: Pour or pipe the batter evenly into the six donut molds to ensure uniform baking across all donuts.
  5. Bake Donuts: Bake the donuts for 15–17 minutes or until a toothpick inserted into the center comes out clean. Be careful not to overbake to keep them moist and tender.
