  • ¼ cup olive oil (or aquafaba for a lighter option)

  • 1 teaspoon thyme

Instructions

  1. Prepare the apples: Core the apples and chop them into ½ inch cubes to ensure even roasting and a tender texture.
  2. Slice the carrots: Cut the carrots on a diagonal (bias) into ¼ inch thick slices to create more surface area for caramelization.
  3. Dice the onion: Chop the onion into ½ inch pieces to evenly cook with the other ingredients in the roast.
  4. Chop the garlic: Finely chop the garlic cloves or substitute with garlic powder if preferred.
  5. Make the glaze: In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme until well combined.
  6. Toss the ingredients: Add the chopped carrots, apples, onion, and garlic to the glaze and toss thoroughly to coat everything evenly.
  7. Initial roasting: Spread the mixture evenly on a baking sheet and roast at 425°F (220°C) for 15 minutes, allowing the side touching the pan to brown.
  8. Flip and continue roasting: Flip the mixture to brown the other side and roast for an additional 10 to 15 minutes until the carrots are fork-tender and the glaze is caramelized.

  • You can substitute aquafaba for olive oil to reduce fat content and keep the dish vegan-friendly.
  • Stone ground Dijon mustard adds texture and depth; regular Dijon mustard can be used but with less texture.
