Ingredients
Scale
Vegetables & Fruits
- 4 large carrots (about 1 pound), sliced on the bias into ¼” thick pieces
- 3 large apples (about 1 pound), cored and chopped into ½” cubes
- 1 onion, diced into ½” pieces
- 5 cloves garlic, finely chopped (or 1 teaspoon garlic powder)
Glaze
- ¼ cup olive oil (or aquafaba for a lighter option)
- ¼ cup maple syrup
- 3 tablespoons stone ground Dijon mustard
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon thyme
Instructions
- Prepare the apples: Core the apples and chop them into ½ inch cubes to ensure even roasting and a tender texture.
- Slice the carrots: Cut the carrots on a diagonal (bias) into ¼ inch thick slices to create more surface area for caramelization.
- Dice the onion: Chop the onion into ½ inch pieces to evenly cook with the other ingredients in the roast.
- Chop the garlic: Finely chop the garlic cloves or substitute with garlic powder if preferred.
- Make the glaze: In a large bowl, whisk together olive oil, maple syrup, Dijon mustard, salt, black pepper, and thyme until well combined.
- Toss the ingredients: Add the chopped carrots, apples, onion, and garlic to the glaze and toss thoroughly to coat everything evenly.
- Initial roasting: Spread the mixture evenly on a baking sheet and roast at 425°F (220°C) for 15 minutes, allowing the side touching the pan to brown.
- Flip and continue roasting: Flip the mixture to brown the other side and roast for an additional 10 to 15 minutes until the carrots are fork-tender and the glaze is caramelized.
Notes
- You can substitute aquafaba for olive oil to reduce fat content and keep the dish vegan-friendly.
- Stone ground Dijon mustard adds texture and depth; regular Dijon mustard can be used but with less texture.
- For an extra layer of flavor, sprinkle fresh thyme leaves on top after roasting.
- Ensure apples are firm varieties like Granny Smith or Honeycrisp to hold their shape during roasting.
- This dish pairs well with roasted meats or as a hearty vegetarian main when served over grains.
