Ingredients
Scale
Eggs and Filling
- 12 large eggs (hard-boiled and peeled)
- 0.5 cup mayonnaise (full fat)
- 2 tbsp unsalted butter (softened to room temp)
- 2 tsp Dijon mustard
- 1 tsp pickle juice (dill or sweet)
- 1 pinch sugar
- 0.125 tsp cayenne pepper (optional)
- 1 pinch salt and pepper (to taste)
Toppings
- 4 strips bacon (cooked crispy and crumbled)
- 1 tbsp fresh chives (finely chopped)
- 1 tsp paprika (for dusting)
Instructions
- Boil the eggs: Place the eggs in a pot and cover them with water. Bring the water to a boil over high heat, then immediately turn off the heat, cover the pot, and let the eggs sit for 12 minutes to cook through.
- Cool the eggs: Transfer the eggs to an ice water bath to cool completely and stop the cooking process. This also makes peeling easier.
- Peel and halve the eggs: Once cooled, peel the eggs and slice each egg in half lengthwise. Carefully remove the yolks and place them into a food processor or a mixing bowl for mashing.
- Prepare the filling: Add mayonnaise, softened butter, Dijon mustard, pickle juice, sugar, cayenne pepper (if using), salt, and pepper to the egg yolks.
- Blend the filling: Blend the mixture until it becomes completely smooth and creamy, ensuring even distribution of all flavors.
- Fill the egg whites: Spoon or pipe the creamy yolk mixture back into the hollowed egg white halves, creating an even, attractive filling.
- Add toppings and chill: Sprinkle the filled eggs with crumbled crispy bacon, chopped fresh chives, and a light dusting of paprika. Chill the deviled eggs in the refrigerator before serving to enhance flavors and texture.
Notes
- Using an ice water bath immediately after boiling helps prevent overcooking and makes peeling easier.
- For best flavor and texture, use full-fat mayonnaise and room-temperature butter.
- Cayenne pepper is optional but adds a subtle spicy kick.
- Cook bacon until very crispy so it adds a nice crunch as a topping.
- These deviled eggs can be made a day ahead and stored covered in the fridge for convenience.
