For the Miso Butter:
- 3 tbsp butter, softened (divided)
- 1 tbsp miso paste
For the Cabbage:
- 1 sweetheart (hispi) cabbage, cut into 4 wedges (pointed cabbage in the US)
- ¼ cup Panko breadcrumbs
- ¼ tsp garlic powder
- 1 tbsp chopped parsley (optional)
Instructions
- Preheat the oven: Preheat the oven to 200C/400F. Cut the cabbage into quarters.
- Prepare the miso butter: Mix 2 tbsp of softened butter with miso paste. Brush the mixture on the cabbage quarters, ensuring to coat all sides. Place the cabbage wedges on a baking sheet and roast for 30-35 minutes until charred on the outside and still slightly crispy.
- Make the breadcrumbs: In a pan, melt the remaining tablespoon of butter. Add the breadcrumbs and garlic powder. Toast while stirring until golden, then remove from the heat immediately.
- Finish and serve: Sprinkle the roasted cabbage with the prepared breadcrumbs before serving. Optionally, garnish with chopped parsley.
