Pie Crust:

Filling:
- 1/3 cup cornstarch
- 1 cup granulated sugar
- 5 tbsp butter
- 3 cups heavy cream
- 1 tbsp vanilla
- 1 pinch table salt
Crust Topping:
- 2 tbsp melted butter
- 2 tbsp granulated sugar
- 1 tsp cinnamon
Instructions
- Preheat: Preheat the oven to 425°F (220°C).
- Prepare Crust: Roll pie crust dough into an 11-inch circle. Place in a pie pan, prick the bottom and sides, line with parchment paper, and bake with weights.
- Bake Crust: Bake the crust, then remove weights and continue baking. Cool crust.
- Make Filling: Whisk sugar and cornstarch, add cream and butter, cook until boiling. Stir in vanilla and salt.
- Fill Crust: Pour cream mixture into cooled crust.
- Add Topping: Pour melted butter over pie, sprinkle cinnamon sugar on top.
- Bake: Bake pie for 20-25 minutes, then broil briefly until sugar caramelizes.
- Cool: Cool pie, then refrigerate until serving.
