Description

Delight in these creamy Oreo Cheesecake Bars featuring a rich cheesecake filling studded with crushed Oreos sitting atop a buttery Oreo cookie crust. Perfectly baked to a smooth, velvety consistency and chilled to set, these bars make an irresistible dessert that combines the classic flavors of cheesecake and Oreos in every bite.

Ingredients

Scale

For the Crust:

  • 1 1/2 cups Oreo cookie crumbs (about 1516 Oreos)
  • 1/4 cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup crushed Oreos (about 45 Oreos)

Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C). Grease an 8×8-inch baking pan or line it with parchment paper for easy removal. In a medium bowl, combine the Oreo cookie crumbs and melted butter, mixing until the crumbs are evenly coated. Press the mixture firmly into the bottom of the prepared baking pan to form an even layer.
  2. Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Add the granulated sugar and vanilla extract, mixing until well combined. Incorporate the eggs one at a time, mixing just until incorporated after each addition to avoid overmixing. Mix in the sour cream until smooth, then gently fold in the crushed Oreos.
  3. Assemble and Bake: Pour the cheesecake filling evenly over the crust in the pan. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center remains slightly jiggly. Remove from the oven and cool at room temperature for about 30 minutes. Then refrigerate for at least 2 hours to chill and set completely.
  4. Serve: Once chilled, use the parchment paper to lift the cheesecake from the pan and cut into squares. Serve chilled and enjoy the rich, creamy Oreo cheesecake bars.

Notes

  • Ensure the cream cheese is fully softened before mixing to avoid lumps.
  • Do not overmix after adding eggs to keep the cheesecake texture light and smooth.
  • Chilling the bars well before cutting helps achieve clean slices.
  • You can substitute regular Oreos with gluten-free Oreos for a gluten-free version.
  • Store leftovers covered in the refrigerator for up to 4 days.
