Ingredients
Scale
Sausage and Hash Browns
- 1 (16-oz) roll breakfast sausage
- 1 (20-oz) package refrigerated hash browns
Cheese
- 2½ cups shredded cheddar cheese, divided
Egg Mixture
- 6 large eggs
- 2 cups half-and-half
Tortillas and Seasoning
- 10 flour tortillas
- Salt and pepper, to taste
- Cooking spray, for baking dish
Instructions
- Cook Sausage: In a large skillet over medium-high heat, cook the breakfast sausage until no longer pink. Remove the cooked sausage from the skillet and set aside.
- Cook Hash Browns: In the same skillet, add the refrigerated hash browns and cook until they start to brown lightly, stirring occasionally to prevent burning.
- Prepare Baking Dish: Spray a 9×13-inch baking dish with cooking spray to prevent sticking.
- Combine Filling: In a bowl, mix together the cooked sausage, browned hash browns, and 2 cups of shredded cheddar cheese. Season with salt and pepper to taste.
- Assemble Burritos: Divide the sausage and cheese mixture evenly among the 10 flour tortillas. Roll each tortilla tightly and place them seam side down into the prepared baking dish.
- Make Egg Mixture: In a separate bowl, whisk together the 6 large eggs and 2 cups half-and-half until completely combined.
- Pour Egg Mixture: Pour the egg and half-and-half mixture evenly over the rolled tortillas in the baking dish, ensuring all are covered.
- Refrigerate Overnight: Cover the baking dish tightly with foil and place in the refrigerator overnight to allow the flavors to meld and the eggs to soak in.
- Bake Covered: The next morning, preheat your oven to 350ºF (175ºC). Bake the casserole covered with foil for 30 to 40 minutes until the eggs are set.
- Add Remaining Cheese and Bake Uncovered: Remove the foil, sprinkle the remaining ½ cup of shredded cheddar cheese evenly over the casserole, and bake for an additional 5 to 10 minutes until the cheese is melted and bubbly.
Notes
- Using refrigerated hash browns adds convenience but you can swap them with fresh grated potatoes for a fresher taste.
- Feel free to add diced vegetables like bell peppers or onions for extra flavor and nutrition.
- This casserole can be customized by swapping sausage with breakfast bacon or chorizo.
- If you prefer a spicier version, add chopped jalapeños or a dash of hot sauce.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- For meal prepping, you can freeze the casserole before baking and cook it straight from frozen by increasing bake time by about 20 minutes.
