Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s ready for crisping the potatoes.
- Boil Potatoes: Boil the Yukon Gold potatoes in salted water until they are fork-tender, about 15-20 minutes.
- Drain and Smash: Drain the potatoes and let them steam dry for a few minutes. Gently smash each potato using a fork until it is flattened but still holds together.
- Season Potatoes: Place the smashed potatoes on a parchment-lined baking sheet. Drizzle them evenly with olive oil, then sprinkle garlic powder, salt, pepper, and half of the Parmesan cheese over the top.
