Ingredients
Scale
Chicken and Seasonings
- 2 boneless, skinless chicken breasts (about 1.5 lbs)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried oregano
- 1/2 teaspoon smoked paprika
Sauce and Aromatics
- 1 tablespoon olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup pepperoncini peppers, sliced
- 1/4 cup pepperoncini juice from the jar
- 1 cup chicken broth
- 2 tablespoons butter
Garnish
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil: Warm 1 tablespoon olive oil in a large skillet over medium-high heat until it shimmers, preparing for searing the chicken.
- Season and cook chicken: Season both sides of the chicken breasts with salt and black pepper. Place them in the hot skillet and cook for 5 to 7 minutes per side until golden brown and fully cooked to an internal temperature of 165°F. Remove the chicken from the skillet and set aside.
- Sauté onions and garlic: In the same skillet, add the diced onion and cook for 3 to 4 minutes until softened. Then add the minced garlic and cook for an additional minute until fragrant.
- Add peppers and liquids: Stir in the sliced pepperoncini peppers, pepperoncini juice, chicken broth, dried oregano, and smoked paprika. Mix well and bring the mixture to a simmer.
- Simmer with chicken: Return the chicken breasts to the skillet. Reduce the heat to medium-low and let everything simmer for 10 to 15 minutes until the sauce thickens slightly and the flavors meld together.
- Finish with butter: Remove the skillet from heat and stir in 2 tablespoons of butter until it melts, creating a glossy sauce.
- Garnish and serve: Sprinkle freshly chopped parsley over the chicken and sauce. Serve immediately for a warm, flavorful meal.
Notes
- Adjust spice level by using more or fewer pepperoncini peppers according to your taste preferences.
- If the sauce becomes too thick, add a small splash of chicken broth to reach your desired consistency.
- For extra flavor, marinate the chicken in pepperoncini juice for 30 minutes before cooking.
- You can substitute chicken thighs for breasts; just add 2 to 3 extra minutes of cook time per side.
