  • 24 tablespoons ice water

For the Filling:

  • 5 large eggs
  • 1 1/4 cups heavy cream (or half and half)
  • 1 1/4 cups chopped ham
  • 1 cup shredded cheese (cheddar, Swiss, or gruyere)
  • 1/3 cup chopped green onions
  • 2 tablespoons chopped parsley
  • Salt and freshly ground black pepper (to taste)

Instructions

  1. For the Crust: Mix flour, sugar, and salt together. Cut in butter until mixture resembles coarse meal. Add ice water gradually until dough holds together. Chill dough, roll out, and place in pie pan.
  2. For the Filling: Beat eggs, then mix in cream, ham, cheese, onions, parsley, salt, and pepper. Pour into prepared crust.
  3. Bake at 350°F for 45-55 minutes until set. Let cool slightly before serving.
