  1. Melt cheese base: In a non-stick frying pan over medium heat, sprinkle half the grated cheese evenly across the pan. Allow it to melt and become slightly crisp, forming a cheesy base.
  2. Whisk eggs: While the cheese is melting, crack the eggs into a bowl and whisk until smooth and homogenous.
  3. Cook eggs: Pour the whisked eggs gently over the melted cheese in the pan. Cover with a lid and cook until the bottom is firm and golden brown.
  4. Flip: Carefully flip the egg and cheese base using a spatula to cook the other side.
  5. Add toppings: Spread the passata evenly on top of the cooked side, then add the salami slices and sprinkle on the remaining grated cheese. Cover the pan again until the cheese melts and the toppings are heated through.
  6. Serve: Remove the pizza eggs from the pan, sprinkle with mixed herbs for freshness and extra flavor, and enjoy immediately while warm.
