These Pumpkin S’mores Bars are a delightful twist on the classic s’mores treat, combining the flavors of pumpkin, chocolate, and gooey marshmallows in a delicious bar form.

For the Cookie Dough:

  • 1/2 cup unsalted butter (softened)
  • 2/3 cup light brown sugar
  • 1/4 cup + 2 tbsp. pumpkin puree
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 cup all-purpose or gluten-free flour
  • 2 tsp. pumpkin pie spice
  • 1/2 tsp. salt
  • 1/4 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 cup semisweet chocolate chips or chocolate chunks (dairy free if desired)

For the Marshmallow Layer:

  • 1/2 cup marshmallow creme or fluff OR 1 cup mini marshmallows divided

Instructions

  1. Preheat the oven: Preheat the oven to 375°F and lightly spray an 8×8-inch pan with cooking oil or baking spray.
  2. Cream butter and sugar: Using a stand or hand mixer, cream the butter and sugar until light and fluffy, about 1 minute.
  3. Add wet ingredients: Mix in the pumpkin puree, egg, and vanilla until just combined.
  4. Combine dry ingredients: In a separate bowl, whisk together flour, pumpkin pie spice, salt, baking powder, and baking soda. Add to the wet mixture and mix until just combined.
  5. Add chocolate chips: Stir in the chocolate chips with a wooden spoon.
  6. Layer the batter: Spread most of the cookie batter into the pan, reserving some for the top.
  7. Add marshmallow layer: Spread marshmallow creme on top of the cookie dough, then sprinkle more chocolate chips on top.
  8. Top with remaining dough: Place chunks of the remaining cookie dough on top of the marshmallow layer.
  9. Bake: Bake for 25-30 minutes until a toothpick comes out mostly clean.
  10. Cool and cut: Let the bars cool in the pan before cutting into squares. For best results, cool completely before serving.
