These Pumpkin S’mores Bars are a delightful twist on the classic s’mores treat, combining the flavors of pumpkin, chocolate, and gooey marshmallows in a delicious bar form.

For the Cookie Dough:
- 1/2 cup unsalted butter (softened)
- 2/3 cup light brown sugar
- 1/4 cup + 2 tbsp. pumpkin puree
- 1 large egg
- 1 tsp. vanilla extract
- 1 cup all-purpose or gluten-free flour
- 2 tsp. pumpkin pie spice
- 1/2 tsp. salt
- 1/4 tsp. baking powder
- 1/4 tsp. baking soda
- 1 cup semisweet chocolate chips or chocolate chunks (dairy free if desired)
For the Marshmallow Layer:
- 1/2 cup marshmallow creme or fluff OR 1 cup mini marshmallows divided
Instructions
- Preheat the oven: Preheat the oven to 375°F and lightly spray an 8×8-inch pan with cooking oil or baking spray.
- Cream butter and sugar: Using a stand or hand mixer, cream the butter and sugar until light and fluffy, about 1 minute.
- Add wet ingredients: Mix in the pumpkin puree, egg, and vanilla until just combined.
- Combine dry ingredients: In a separate bowl, whisk together flour, pumpkin pie spice, salt, baking powder, and baking soda. Add to the wet mixture and mix until just combined.
- Add chocolate chips: Stir in the chocolate chips with a wooden spoon.
- Layer the batter: Spread most of the cookie batter into the pan, reserving some for the top.
- Add marshmallow layer: Spread marshmallow creme on top of the cookie dough, then sprinkle more chocolate chips on top.
- Top with remaining dough: Place chunks of the remaining cookie dough on top of the marshmallow layer.
- Bake: Bake for 25-30 minutes until a toothpick comes out mostly clean.
- Cool and cut: Let the bars cool in the pan before cutting into squares. For best results, cool completely before serving.
- Storage: Store leftovers in a covered container and reheat in the microwave for a few seconds to enjoy again.
