Bacon:
- 8 ounces bacon, cut into 1-inch slices
Vegetables:

- 2 large leeks, sliced
- 2 green onions, sliced and divided
- 3 cloves garlic, chopped
- 1 teaspoon thyme, chopped
- 2 pounds potatoes, cut into bite-sized pieces
- 4 cups cabbage, shredded
Additional:
- 6 cups chicken broth
- 1/2 cup heavy/whipping cream
- Salt and pepper to taste
Instructions
- Cook the bacon: In a large saucepan, cook the bacon until crispy. Remove and set aside, reserving 2 tablespoons of bacon grease in the pan.
- Sauté the vegetables: Add onions, leeks, white parts of green onions, garlic, and thyme to the pan. Cook until tender.
- Add remaining ingredients: Pour in chicken broth, cream, potatoes, cabbage, and cooked bacon. Bring to a boil, then simmer until potatoes are tender.
- Season and serve: Season with salt and pepper, stir in green parts of green onions, and enjoy!
