Chicken:
- 1 recipe chicken brine (optional but highly recommended)
- 5 lb whole chicken
Herb Mixture:
- 2 sprigs fresh rosemary
- 2 sprigs fresh thyme
- 1 onion, peeled and quartered
- 1 lemon, quartered
- 6 tablespoons butter, softened
- 2 teaspoons minced garlic
- 2 teaspoons fresh thyme leaves, minced
- 2 teaspoons fresh rosemary leaves, minced
- 1 tablespoon fresh parsley leaves, minced
- Salt and pepper to taste (go easy on the salt if you’ve brined your chicken)
Instructions
- Brine the Chicken (Optional but Recommended): If using a chicken brine, follow the recipe to soak the chicken for several hours or overnight to ensure it’s tender and flavorful.
- Prepare the Chicken: Preheat the oven to 425°F (220°C).
- Remove the chicken from the brine (if using) and pat it dry with paper towels. Place the chicken on a roasting rack inside a roasting pan.
- Season the Chicken: Stuff the chicken cavity with rosemary sprigs, thyme sprigs, onion, and lemon quarters.
- In a small bowl, combine softened butter, minced garlic, minced thyme, minced rosemary, and minced parsley. Season with salt and pepper to taste.
- Carefully loosen the skin from the chicken breast and thighs and rub the garlic-herb butter mixture under the skin. Rub the remaining butter all over the chicken’s skin.
- Roast the Chicken: Place the chicken in the preheated oven and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- If the skin begins to brown too quickly, loosely cover the chicken with aluminum foil.
- Rest and Serve: Once the chicken is roasted, remove it from the oven and let it rest for 10-15 minutes before carving to allow the juices to redistribute.
