Batter & Coating

  • Vegetable oil for frying

  • 4 oz cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Soak Pineapple Rings: Place the pineapple rings in a bowl and pour over the dark rum and coconut rum. Allow the pineapple to soak for at least 1 hour to absorb the flavors. After soaking, drain the rings and pat them dry with paper towels to remove excess moisture.
  2. Prepare Coating Stations: Set up three shallow bowls — one with all-purpose flour, one with the sweetened coconut flakes, and one with a whisked mixture of the two large eggs and ½ cup coconut milk. These will be used for dredging and coating the pineapple rings.
  3. Coat the Pineapple Rings: Dip each pineapple ring first into the flour, ensuring it’s evenly coated. Then, immerse it into the egg and coconut milk mixture, allowing excess to drip off. Finally, press each side of the pineapple ring into the coconut flakes, coating thoroughly for a crispy crust.
