Savory Beef and Broccoli is a quick and flavorful Chinese-inspired dish featuring tender flank steak marinated and cooked to caramelized perfection, paired with crisp-tender broccoli florets in a rich, savory sauce. This easy homemade recipe makes a perfect weeknight dinner that’s both satisfying and wholesome.

Ingredients

Scale

For the Beef Marinade

  • 1 pound flank steak, thinly sliced
  • 2 tablespoons cornstarch
  • 1 tablespoon neutral oil (for marinade)
  • 2 tablespoons soy sauce
  • 1/2 teaspoon baking soda

For the Sauce

  • 1 cup beef stock
  • 2 tablespoons oyster sauce
  • 2 tablespoons Shaoxing wine or dry sherry
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch (for thickening)
  • 1 tablespoon dark soy sauce
  • 1/4 teaspoon white pepper

For the Vegetables

  • 2 tablespoons neutral oil (for sautéing)
  • 4 cups broccoli florets
  • 3 stalks scallions, chopped
  • 1 tablespoon ginger, minced
  • 3 cloves garlic, minced

Finishing Touch

  • 1 teaspoon sesame oil (for drizzling)

Instructions

  1. Prepare the Beef: Thinly slice the flank steak against the grain into bite-sized pieces to ensure tenderness.
  2. Marinate the Beef: In a small bowl, whisk together cornstarch, neutral oil, soy sauce, and baking soda. Add the sliced beef and toss to coat evenly. Let it marinate for at least 10 minutes to tenderize and flavor the meat.
  3. Make the Sauce: In a separate bowl, combine beef stock, oyster sauce, Shaoxing wine, soy sauce, cornstarch, dark soy sauce, and white pepper. Whisk well until smooth, then set aside.
  4. Sauté the Broccoli: Heat 1 tablespoon of neutral oil in a large sauté pan or wok over medium-high heat. Add broccoli florets and cook for 6 to 8 minutes until they are crisp-tender. Remove broccoli from pan and set aside on a plate.
  5. Cook the Beef: Add remaining tablespoon of oil to the pan. Arrange the marinated beef in an even layer and cook undisturbed for about 1 minute to develop caramelization. Flip the beef, then add minced ginger and garlic. Cook for another 1 to 2 minutes until beef is nearly cooked through.
  6. Combine and Finish: Return sautéed broccoli and chopped scallions to the pan with the beef. Pour in the prepared sauce and toss everything together for 30 to 60 seconds until the sauce thickens and coats the ingredients well.
  7. Final Touch: Remove the pan from heat and stir in the sesame oil for added aroma. Adjust seasoning with extra soy sauce if desired.
  8. Serve: Serve the savory beef and broccoli hot over steamed rice for a wholesome meal.

Notes

  • Garnish with toasted sesame seeds for an added crunch and nutty flavor.
  • Use flank steak or any tender cut to ensure the beef stays juicy and tender.
  • Adjust the amount of soy and oyster sauce to suit your taste preference for saltiness and umami intensity.
  • For a gluten-free version, substitute soy sauce with tamari.
  • Cook broccoli just until crisp-tender to retain nutrients and vibrant color.
