Shrimp:

  • 1 lb shrimp (peeled and deveined)

Asparagus:

  • 1 bunch asparagus (trimmed, 1-inch pieces)

Mushrooms:

  • 1 cup mushrooms (sliced)

Other:

  • 2 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice

Instructions

  1. Heat 1 tbsp olive oil in a skillet or wok over medium-high heat. Cook shrimp for 2–3 minutes until pink and opaque. Remove and set aside.
  2. Add 1 tbsp olive oil to the pan, sauté asparagus and mushrooms for 3–4 minutes.
  3. Add garlic, salt, and pepper, cook for 1 minute.
  4. Return shrimp to the pan, stir in soy sauce and lemon juice, and combine.
  5. Serve hot over rice, noodles, or quinoa.
