Ingredients
Scale
Chicken
- 1 lb chicken breasts
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp onion powder
- 1 tsp Italian seasoning
- 2 tbsp minced garlic
- Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat the chicken, approximately 1/3 to 1/2 cup)
- 1 cup shredded mozzarella cheese
Potatoes
- 5 medium-sized potatoes, chopped into bite-sized pieces
- 2 tbsp olive oil
- Salt, pepper, garlic powder, paprika (to season potatoes, about 1/2 tsp each)
Instructions
- Prepare Potatoes: Wash and chop the potatoes into bite-sized pieces. In a large bowl, toss them thoroughly with olive oil, salt, pepper, garlic powder, and paprika to ensure even seasoning.
- Layer Potatoes in Slow Cooker: Place the seasoned potatoes evenly in the bottom of the slow cooker to create a base for the chicken.
- Season Chicken: Rub the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning until fully coated for a flavorful crust.
- Add Chicken to Slow Cooker: Lay the seasoned chicken breasts on top of the potato layer in the slow cooker.
- Apply Garlic: Evenly spread the minced garlic over the top of the chicken to infuse a rich garlic flavor during cooking.
- Add Sauce: Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly, about 1/3 to 1/2 cup.
- Cook: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is cooked through and the potatoes are tender.
- Add Cheese: In the last 30 minutes of cooking, sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes. Cover again to let the cheese melt beautifully.
- Serve: Once done, serve warm. Optionally, garnish with extra Parmesan cheese or fresh herbs for added flavor and presentation.
Notes
- You can substitute the Buffalo Wild Wings Garlic Parmesan Sauce with any creamy garlic Parmesan sauce or homemade version if unavailable.
- For crispier potatoes, you can broil them for a few minutes after slow cooking before adding cheese, but this is optional.
- Use boneless, skinless chicken breasts for even cooking and ease of shredding if desired.
- Adjust seasoning quantities to taste, especially salt and paprika, based on preference.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
