Description

A comforting slow cooker recipe featuring tender chicken breasts and seasoned potatoes smothered in rich Buffalo Wild Wings Garlic Parmesan Sauce, topped with melted mozzarella cheese. Perfect for a hands-off, flavorful weeknight meal.

Ingredients

Scale

Chicken

  • 1 lb chicken breasts
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 2 tbsp minced garlic
  • Buffalo Wild Wings Garlic Parmesan Sauce (enough to coat the chicken, approximately 1/3 to 1/2 cup)
  • 1 cup shredded mozzarella cheese

Potatoes

  • 5 medium-sized potatoes, chopped into bite-sized pieces
  • 2 tbsp olive oil
  • Salt, pepper, garlic powder, paprika (to season potatoes, about 1/2 tsp each)

Instructions

  1. Prepare Potatoes: Wash and chop the potatoes into bite-sized pieces. In a large bowl, toss them thoroughly with olive oil, salt, pepper, garlic powder, and paprika to ensure even seasoning.
  2. Layer Potatoes in Slow Cooker: Place the seasoned potatoes evenly in the bottom of the slow cooker to create a base for the chicken.
  3. Season Chicken: Rub the chicken breasts with salt, pepper, paprika, onion powder, and Italian seasoning until fully coated for a flavorful crust.
  4. Add Chicken to Slow Cooker: Lay the seasoned chicken breasts on top of the potato layer in the slow cooker.
  5. Apply Garlic: Evenly spread the minced garlic over the top of the chicken to infuse a rich garlic flavor during cooking.
  6. Add Sauce: Pour enough Buffalo Wild Wings Garlic Parmesan Sauce over the chicken to coat it thoroughly, about 1/3 to 1/2 cup.
  7. Cook: Cover the slow cooker and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is cooked through and the potatoes are tender.
  8. Add Cheese: In the last 30 minutes of cooking, sprinkle the shredded mozzarella cheese evenly over the chicken and potatoes. Cover again to let the cheese melt beautifully.
  9. Serve: Once done, serve warm. Optionally, garnish with extra Parmesan cheese or fresh herbs for added flavor and presentation.

Notes

  • You can substitute the Buffalo Wild Wings Garlic Parmesan Sauce with any creamy garlic Parmesan sauce or homemade version if unavailable.
  • For crispier potatoes, you can broil them for a few minutes after slow cooking before adding cheese, but this is optional.
  • Use boneless, skinless chicken breasts for even cooking and ease of shredding if desired.
  • Adjust seasoning quantities to taste, especially salt and paprika, based on preference.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently.
