Instructions

  1. Prepare the Broccoli: Wash the broccoli crowns thoroughly under running water and pat them dry using a clean kitchen towel or paper towels. Cut the crowns into medium-sized florets, aiming for even sizes to ensure uniform cooking later.
  2. Boil or Steam Until Tender: Bring a pot of salted water to a boil or prepare a steamer. Cook the broccoli florets by boiling them in the salted water for about 6-8 minutes or steaming until they are tender but still have a slight crispness. Avoid overcooking to prevent them from becoming mushy.
  3. Smash the Broccoli Florets: Carefully transfer the cooked florets to a sturdy and flat work surface. Use the bottom of a glass, spatula, or another flat kitchen tool to gently press down on each floret, flattening them slightly. This increases their surface area, which helps create crispy edges when roasted.
  4. Season and Roast: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. Arrange the smashed broccoli florets in a single layer on the sheet. Drizzle with the extra virgin olive oil, sprinkle the minced garlic evenly over the broccoli, then season with sea salt and freshly ground black pepper.
