Description

A quick and flavorful Spicy Peanut Butter Noodles recipe featuring tender rice noodles tossed in a creamy, spicy peanut sauce. Perfect for a satisfying lunch or dinner, this dish combines the richness of peanut butter with the heat of sriracha and tang of lime for a delicious Asian-inspired meal ready in just 15 minutes.

Ingredients

Scale

Noodles

  • 6 oz (170g) rice noodles or your favorite spaghetti-style noodles

Sauce

  • 1/4 cup (65g) natural creamy peanut butter
  • 1 tablespoon sriracha or your favorite chili paste
  • 2 tablespoons soy sauce
  • 1 tablespoon fresh lime juice or rice vinegar

Optional Garnish

  • Chopped scallions
  • Crushed peanuts

Instructions

  1. Cook the noodles: Bring a large pot of salted water to a boil. Add the rice noodles and cook them according to the package instructions until just tender, usually about 4-6 minutes. Once cooked, drain the noodles and rinse under cold water to stop the cooking process and prevent the noodles from sticking together. Set aside.
  2. Prepare the sauce: In a medium bowl, whisk together the natural creamy peanut butter, sriracha, soy sauce, and fresh lime juice or rice vinegar until the sauce becomes silky and smooth. If the sauce is too thick, add warm water a teaspoon at a time to reach the desired consistency.
  3. Toss noodles with sauce: Add the cooked and cooled noodles to the bowl with the peanut sauce. Toss gently using tongs or forks until the noodles are evenly coated with the sauce. Adjust the flavor by adding more soy sauce or lime juice as needed.
  4. Serve and garnish: Transfer the coated noodles to a serving dish. Garnish with chopped scallions or crushed peanuts for added texture and flavor. Drizzle extra sriracha over the top if you desire extra spiciness. Serve immediately.
