- 2 tablespoons sriracha sauce
- ½ cup mayonnaise

- 1 small cucumber, julienned
- 1 tablespoon sesame seeds (optional, for garnish)
- Fresh cilantro or green onions (optional, for garnish)
Instructions
- Cook the Sushi Rice: Wash the sushi rice under cold water until the water runs clear. In a medium pot, combine the rice and water. Bring to a boil, reduce the heat, cover, and simmer for 15 minutes. Remove from heat, stir in rice vinegar and salt. Cover and let sit for 10 minutes.
- Prepare the Shrimp: Heat olive oil in a skillet, cook shrimp until opaque. Combine soy sauce, rice vinegar, sesame oil, sugar, and sriracha. Toss shrimp in the mixture and cook for an additional minute.
- Assemble the Sushi Stacks: Layer seasoned rice, spicy shrimp, avocado, and cucumber in serving glasses or bowls. Garnish with sesame seeds and cilantro or green onions.
