  • 2 packs puff pastry cups (keep frozen)
  • PAM Non-GMO Avocado Oil Cooking Spray

Filling

  • 8 oz cream cheese, room temperature
  • 2 cups torn baby spinach
  • 8 oz marinated artichokes, chopped
  • 1 cup shredded Swiss cheese
  • ½ cup shredded Parmesan cheese (reserve 1 tbsp for topping)
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ tsp garlic powder

Instructions

  1. Preheat & Prepare: Preheat your oven to 425°F (220°C). Spray a sheet pan with PAM Non-GMO Avocado Oil Cooking Spray. Place the frozen puff pastry cups on the pan, spray the tops lightly, and bake for 18 minutes or until they turn a beautiful golden brown. Remove from the oven and allow them to cool on a rack for 5 minutes. Once cooled, carefully remove the tops of the puff pastry cups to make space for the filling.
  2. Make the Filling: In a mixing bowl, combine the room temperature cream cheese, torn baby spinach, chopped marinated artichokes, shredded Swiss cheese, and half a cup of Parmesan cheese. Add salt, pepper, and garlic powder to season. Stir the mixture thoroughly until evenly combined. Microwave this mixture for 2 minutes to soften and meld the flavors, then stir once again to ensure a smooth filling.
  3. Assemble the Cups: Spoon the creamy spinach and artichoke filling generously into the hollowed puff pastry cups. Sprinkle the reserved tablespoon of Parmesan cheese evenly over the tops for an added cheesy crust. Serve immediately or warm slightly to enjoy the full flavors and texture contrast between the flaky pastry and creamy filling.
