Description

Strawberry Cream Puffs are an elegant dessert featuring crisp, golden puff pastry filled with luscious, sweetened whipped cream infused with white cocoa syrup and topped with fresh strawberries, strawberry jam, and a drizzle of melted chocolate. This treat offers a perfect balance of light, airy texture with fresh berry sweetness, ideal for afternoon tea or any special occasion.

Ingredients

Scale

Puff Pastry

  • 400g Puff pastry
  • Eggwash (for brushing)

Filling

  • 100g Fresh strawberries, sliced
  • 100ml Whipping cream, sweetened with a few tablespoons of icing sugar
  • 1 tablespoon White cocoa syrup (@saveur_cestdelicieux)
  • 8 teaspoons Strawberry jam

Toppings

  • About 2 tablespoons Icing sugar for sprinkling
  • Melted chocolate for drizzling

Instructions

  1. Prepare Puff Pastry: Cut hearts or rectangles from the puff pastry sheet. Use the entire 400g if cutting hearts, or half if cutting rectangles. Save off cuts for other uses.
  2. Apply Eggwash: Brush the cut pastry shapes with eggwash to achieve a golden finish when baked.
  3. Bake Pastry: Bake the pastry in a preheated oven until golden and crisp, ensuring an airy texture.
  4. Slice Pastry: Once cooled, carefully slice the baked hearts or rectangles open to create a top and bottom layer.
  5. Add Jam: Spoon about 1 teaspoon of strawberry jam inside the bottom layer of each pastry piece.
  6. Prepare Cream: Whip the sweetened cream until stiff peaks form, incorporating the white cocoa syrup for added flavor.
  7. Pipe Cream: Generously pipe the sweetened whipped cream onto the jam layer of each puff.
  8. Top with Strawberries: Place freshly sliced strawberries atop the cream layer.
  9. Close Pastry: Carefully place the top pastry layer over the cream and strawberries to complete the puff.
  10. Finish and Serve: Dust the cream puffs with icing sugar and drizzle with melted chocolate for an elegant presentation. Serve chilled and enjoy.

Notes

  • Use chilled puff pastry for easier handling and better puffing during baking.
  • The white cocoa syrup adds a unique flavor; if unavailable, substitute with a small amount of vanilla extract for a different but pleasant taste.
  • Ensure the whipped cream is sweetened adequately to balance the tartness of the strawberries.
  • For best results, serve the cream puffs chilled to keep the cream filling firm and fresh.
  • Off cuts of puff pastry can be baked separately and used as a base for tarts or pies.
