These Strawberry Lime Gooey Bars combine the zingy freshness of lime with the sweetness of strawberry cake mix and white chocolate chips, creating a delightfully gooey treat perfect for any occasion. With a soft, buttery base layered with melted white chocolate and sweetened condensed milk, these bars are easy to prepare and irresistibly delicious.

Ingredients

Scale

Base and Topping

  • 15.25 ounces Strawberry Cake Mix (1 box)
  • ½ cup unsalted butter (1 stick, softened)
  • 1 egg (room temperature)
  • 1 lime (zested and juiced)

Layers

  • ⅔ cup white chocolate chips
  • ½ cup sweetened condensed milk

Optional Garnish

  • Lime zest (for topping the bars, if desired)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the bars.
  2. Prepare Pan: Line a 9×9 inch baking pan with aluminum foil and spray it with cooking spray to prevent sticking. Set aside.
  3. Mix Butter: Using a mixer, beat the softened butter until it becomes soft and fluffy, which helps create a smooth base.
  4. Add Ingredients: To the beaten butter, add the strawberry cake mix, egg, freshly squeezed lime juice, and lime zest. Continue beating until all ingredients are fully combined into a smooth batter.
  5. Press Base Layer: Take about two-thirds of the cake mixture and press it evenly onto the bottom of the foil-lined pan, forming the base layer.
  6. Add White Chocolate: Sprinkle the white chocolate chips evenly over the pressed base layer.
  7. Drizzle Condensed Milk: Drizzle the sweetened condensed milk evenly over the white chocolate chips for a gooey richness.
  8. Add Crumble Topping: Crumble the remaining one-third of the cake mixture over the top of the condensed milk layer, spreading and pressing lightly to cover.
  9. Bake: Place the pan in the preheated oven and bake for 29-32 minutes, or until the edges begin to brown and the bars are set.
  10. Cool Bars: Remove from oven and allow the bars to cool completely in the pan before cutting to prevent crumbling.
  11. Garnish: If desired, sprinkle additional lime zest over the top for extra flavor and a fresh appearance.
  12. Store: Store the bars in an airtight container at room temperature for up to one week to maintain freshness.

Notes

  • Make sure the butter is softened to room temperature for easier mixing.
  • Using fresh lime zest and juice will brighten the flavor more than bottled juice.
  • If you prefer, substitute white chocolate chips with regular or dark chocolate chips for a different flavor profile.
  • These bars can be refrigerated to extend shelf life up to 10 days; bring to room temperature before serving for best texture.
  • For easier removal, lift bars out using the foil liner after cooling.
