  • Author: anna
  • Total Time: 2 hours 30 minutes (including chilling and resting time)
  • Yield: Approximately 24 truffles 1x

Description

Strawberry Shortcake Truffles are delightful bite-sized no-bake treats combining heat-treated strawberry cake mix dough with cream cheese and cream cheese chips, coated in smooth vanilla melting wafers and decorated with vibrant pink candy melts for an eye-catching ombre effect. Perfect for parties, gifting, and spring celebrations, these truffles offer a rich, fresh flavor and a glossy professional finish while ensuring safety through a unique heat-treating step.

Ingredients

Scale

Base Ingredients

  • 15.25 oz strawberry cake mix (Betty Crocker recommended)
  • 8 oz block cream cheese, softened
  • ⅓ cup cream cheese chips, roughly chopped

Coating and Decoration

  • 2 bags (10 oz each) Ghirardelli vanilla melting wafers
  • ½ cup pink Wilton candy melts
  • ½ cup bright pink Wilton candy melts
  • Sprinkles (optional)

Instructions

  1. Heat Treat the Cake Mix: Preheat your oven to 350°F (175°C). Spread the strawberry cake mix evenly on a lined baking sheet and bake for 5 minutes to eliminate any bacteria. Alternatively, microwave the cake mix for 3 minutes, stirring every 30 seconds. After heat treating, allow the cake mix to cool completely to preserve texture.
  2. Create the Dough: Beat the softened cream cheese using a hand mixer until smooth and creamy. Gently fold in the cooled cake mix with a spatula to avoid mess, then mix again with the hand mixer until a beautiful, uniform dough forms. Finally, fold in the roughly chopped cream cheese chips for added texture and flavor.
  3. Chill and Roll the Dough: Cover the dough tightly and refrigerate for 2 hours to firm it up, making it easier to handle. Once chilled, use a 1 ½ tablespoon scoop to form uniform balls. After shaping, let the dough balls rest at room temperature for 15 minutes to avoid cracking during coating.
  4. Prepare the Vanilla Coating: Melt the vanilla melting wafers using a double boiler method to ensure smoothness and a professional glossy finish. Using a fork, fully dip each dough ball into the melted vanilla wafers, tapping off excess coating carefully. Place truffles on parchment paper. Before the coating dries, decorate half of the truffles with sprinkles for added vibrancy.
  5. Drizzle with Pink Candy Melts: Melt the two shades of pink Wilton candy melts in separate piping bags. Drizzle bright pink and pink candy melts over the remaining truffles to create a stunning ombre and fresh appearance. Allow the truffles to set completely at room temperature.

Notes

  • Allow rolled dough balls to rest 15 minutes before dipping to prevent cracking.
  • Use a double boiler to melt vanilla wafers for consistent temperature and smooth dipping.
  • Roughly chop cream cheese chips for even flavor distribution.
  • Gently tap fork on the side of the bowl to remove excess coating evenly for a professional look.
  • Store truffles in an airtight container in the refrigerator for up to 5 days for freshness.
  • You can freeze truffles for up to 2 months; enjoy slightly chilled or at room temperature.
