Scale
Main Ingredients
- 8 oz flat rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1 cup baby corn, sliced
- 2 eggs, beaten
Sauce
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 tsp chili paste
Garnish
- Fresh basil leaves for garnish
Instructions
- Prepare noodles: Cook the flat rice noodles according to the package instructions until tender. Drain and set aside.
- Heat oil and garlic: In a large pan over medium heat, heat the vegetable oil. Add the minced garlic and sauté for about 1 minute until fragrant, taking care not to burn.
- Cook vegetables: Add the sliced bell peppers, broccoli florets, julienned carrots, and sliced baby corn to the pan. Stir-fry the vegetables for 5 minutes until they are tender-crisp.
- Scramble eggs: Push the vegetables to one side of the pan. Pour the beaten eggs into the empty side and scramble them until fully cooked.
- Combine noodles and sauce: Add the cooked rice noodles to the pan with vegetables and eggs. Pour in the soy sauce, oyster sauce, fish sauce, sugar, and chili paste. Toss everything together thoroughly to ensure the noodles and veggies are evenly coated with the sauce.
- Final cooking: Cook for an additional 2 to 3 minutes, stirring frequently to heat all ingredients through and meld the flavors.
- Garnish and serve: Remove from heat, garnish with fresh basil leaves, and serve immediately.
Notes
- You can adjust the amount of chili paste for your preferred spice level.
- Substitute oyster sauce with a vegan alternative for a vegetarian version.
- Soak rice noodles in warm water if package instructions differ to avoid overcooking during stir-frying.
- Feel free to swap vegetables based on seasonal availability or personal preference.
