Instructions
- Preparation: Begin by peeling, slicing, and dicing the pear. Toss the pear pieces with lemon juice in a small bowl to prevent browning and set aside.
- Cook Turkey Strips: Heat a large skillet over medium heat. Add the fresh turkey strips and cook them until golden brown on all sides. Use a slotted spoon to remove the cooked turkey from the skillet and drain any excess fat.
- Sauté Shallots: In the same skillet, add the sliced shallots and cook for about one minute, stirring occasionally, until they soften slightly.
- Add Dijon Mustard: Stir the Dijon mustard into the shallots in the skillet, allowing the flavors to meld over the heat.
- Combine Peas and Pears: Add the frozen peas and the diced pears to the skillet. Stir gently and cook for approximately five minutes until everything is warmed through and the peas are tender.
- Mix in Turkey and Parsley: Remove the skillet from the heat. Add half of the cooked turkey strips, chopped parsley, and freshly ground black pepper to the mixture. Stir to combine.
- Serve and Garnish: Transfer the pea and pear mixture to a serving bowl. Top with the remaining turkey strips and sprinkle lemon zest over the top as garnish. Serve warm to enjoy.
