  • 3 packs enoki mushrooms

Instructions

  1. Heat Aromatics: In a medium pot, heat the oil over medium heat until shimmering. Add the ginger slices and smashed garlic cloves, cooking for about 2 minutes until fragrant.
  2. Cook Ground Beef: Increase heat to medium-high and add the lean ground beef. Cook for approximately 5 minutes, stirring occasionally, until the beef loses its pink color and starts sizzling.
  3. Add Tomato Paste: Stir in the tomato paste and cook for 2 more minutes to deepen the flavor and remove any raw taste.
  4. Simmer Soup: Pour in the low-sodium chicken stock, then add sugar, salt, ground white pepper, white vinegar, enoki mushrooms, and the white parts of the scallions. Reduce heat to a simmer and cook for at least 15 minutes, allowing the mushrooms to soften and absorb the broth’s flavors.
