Chicken Salad Mixture

  • 1 small celery stalk, diced small
  • 2 tbsp chopped fresh parsley (optional)
  • Salt and pepper to taste

Sandwich Assembly

  • Red onion, thinly sliced (use desired amount)
  • 8 thin cheddar cheese slices
  • 2 tomato slices from a large tomato
  • Softened butter for spreading on bread
  • 4 thick bread slices, like honey wheat

Instructions

  1. Prepare Chicken Salad Mixture: In a medium bowl, combine shredded and finely chopped cooked chicken breast with mayo, honey mustard, diced celery, chopped fresh parsley if using, and season with salt and pepper to taste. Mix well until all ingredients are evenly incorporated.
  2. Butter the Bread and Add Cheese: Spread softened butter evenly on one side of each bread slice. Then flip the slices over and place two slices of cheddar cheese on the non-buttered side of each slice. Each sandwich will use a total of 4 cheese slices.
  3. Assemble the Sandwich: Place half of the chicken salad mixture on top of the cheese on one bread slice. Top the chicken mixture with thin slices of red onion, one slice of tomato, and then two more slices of cheddar cheese. Place another bread slice on top, buttered side up, and gently press down to secure the sandwich. Repeat for the second sandwich.
  4. Grill the Sandwich: Heat a griddle or a large non-stick skillet over medium-low heat. Place the assembled sandwich carefully on the hot surface and cover with a lid if using a skillet. Grill each side for 3 to 4 minutes or until the bread is deep golden brown and the cheese has melted. Carefully flip and cook the other side similarly.
  5. Serve: Remove from heat, slice each sandwich in half, and serve immediately while warm and melty.
