Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk or cream
Instructions
- Preheat oven and prepare pan: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare dry ingredients: In a large bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves.
- Mix wet ingredients: In another large bowl, cream the butter, oil, and sugar. Add eggs one at a time, then mix in vanilla.
- Combine wet and dry ingredients: Add dry ingredients to wet mixture and mix until just combined.
- Fold in zucchini and nuts: Gently fold in shredded zucchini and chopped nuts.
- Bake: Spread batter in the pan and bake for 25-30 minutes until a skewer comes out clean.
- Cool and prepare frosting: Let bars cool. For the frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and milk/cream.
- Frost bars: Once bars are cool, spread frosting evenly over the top.
- Serve: Cut into squares and enjoy!
