Instructions

  1. Prepare the cream cheese mixture: In a medium bowl, combine the softened cream cheese, mayonnaise, dried parsley, dried dill weed, garlic powder, onion powder, and dried minced onion. Mix well until smooth and evenly blended.
  2. Add vegetables and cheese: Fold in the finely chopped vegetables and shredded cheddar cheese into the cream cheese mixture, ensuring everything is well incorporated.
  3. Spread the mixture on tortillas: Working with one tortilla at a time, spread about ½ cup of the cream cheese and vegetable mixture evenly over the tortilla surface, extending all the way to the edges for full coverage.
  4. Roll and wrap: Roll the tortilla tightly into a log shape, then wrap it securely in plastic wrap to hold its shape. Repeat this process with the remaining tortillas and mixture.
  5. Chill the roll ups: Place the wrapped tortillas in the refrigerator and chill for at least 2 hours, or preferably overnight, to allow flavors to meld and the mixture to firm up.
