This Weight Watchers friendly cinnamon roll casserole is a delicious and easy-to-make breakfast or dessert that will satisfy your cravings for a sweet treat. It combines the flavors of classic cinnamon rolls with a simple casserole twist.

For the Casserole:

  • 1 17.5 oz. can refrigerated reduced-fat cinnamon rolls, icing reserved
  • 4 eggs
  • ⅓ cup fat-free milk + 2 Tablespoons for icing
  • 1 Tbsp. cinnamon
  • 1 tsp. vanilla

For the Icing (if using 2-ingredient dough):

  • 1/2 cup powdered sugar
  • 2 tbsp plain Greek yogurt
  • 1/4 tsp vanilla extract

Instructions

  1. For the Casserole: Preheat oven to 350 degrees. Cut each cinnamon roll into sixths. Spray casserole dish. Add cinnamon roll pieces.
  2. Whisk eggs, 1/3 cup milk, cinnamon, and vanilla in a bowl. Pour egg mixture over cinnamon rolls.
  3. Bake for 35 minutes or until golden brown.
  4. Add a little milk to icing to thin it out. Whisk or blend with mixer. Pour icing over casserole.
  5. For the 2-Ingredient Dough: Make the dough using the 2-ingredient dough recipe. Roll out the dough, cut into pieces, place in a baking pan, pour the egg mixture over, and bake until golden brown.
  6. While baking, mix powdered sugar, plain Greek yogurt, and vanilla extract in a bowl to make the icing.
  7. Remove casserole from oven and pour icing over the top.
  8. Let sit for 20 minutes, then serve and enjoy!

  • You can customize the casserole by adding nuts, raisins, or your favorite toppings.
  • If using the 2-ingredient dough, ensure the dough is rolled out thinly for best results.
