Lemon Syrup:
- 1 cup fresh lemon juice (about 6–8 lemons)
- 1 ½ cups granulated sugar
- 4 cups cold water, divided
Whipped Cream:
- 1 cup heavy cream
- Ice cubes, for serving
- Lemon slices, for garnish (optional)
- Mint sprigs, for garnish (optional)
Instructions
- Combine lemon juice and sugar: In a medium saucepan, mix lemon juice and sugar. Heat over medium heat, stirring until sugar dissolves (5-7 minutes).
- Simmer: Gently simmer for 1 minute without boiling vigorously.
- Cool: Remove from heat and let it cool completely.
- Whip cream: Whip chilled heavy cream in a bowl using an electric mixer until soft peaks form. Avoid overwhipping.
- Combine lemon syrup and water: In a large pitcher, mix cooled lemon syrup with 2 cups of cold water. Adjust sweetness.
- Add ice and whipped cream: Fill pitcher with ice cubes. Gently fold in half of the whipped cream. Repeat with the remaining cream.
- Final mixing: Add the remaining 2 cups of cold water and gently stir.
- Serve: Pour into glasses filled with ice. Garnish with lemon slices and mint sprigs. Serve immediately.
