Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 1 tablespoon minced garlic (about 3 cloves)
  • 2 cups chicken broth
  • 2 (14-ounce) cans great Northern beans, drained
  • 2 (4-ounce) cans mild green chiles, with juices
  • 1 pound boneless skinless chicken breasts, diced
  • 1 cup corn kernels
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2/3 cup sour cream

Instructions

  1. Sauté Aromatics: Heat the olive oil in a large pot over medium-high heat. Add the diced onions and cook for about 4 minutes until they become soft and translucent. Then add the minced garlic and cook for an additional 30 seconds to release its fragrant aroma.
  2. Add Main Ingredients and Simmer: Pour in the chicken broth, then add the drained great Northern beans, mild green chiles with their juices, diced chicken breasts, corn kernels, chili powder, ground cumin, dried oregano, salt, and black pepper. Stir to combine. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer gently for 10 minutes, making sure the chicken cooks through completely.
  3. Incorporate Sour Cream Safely: In a small bowl, mix the sour cream with about 1/2 cup of hot chili to temper it and prevent curdling. Once combined, pour this mixture back into the pot and stir well until the chili is creamy and well blended. Serve immediately and enjoy your warming white chicken chili!

Notes

  • Tempering the sour cream before adding it to the chili prevents curdling and keeps the chili smooth and creamy.
  • You can use fresh or frozen corn kernels depending on availability.
  • For extra heat, add diced jalapeños or increase the amount of chili powder.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
