  • 6–8 cups corn tortilla chips
  • 1 small red onion, diced
  • ½ yellow bell pepper, seeded and chopped
  • ½ red bell pepper, seeded and chopped
  • ½ small jalapeño pepper, seeded and diced
  • ¾ cup sliced black olives
  • 3 cups shredded cheese (marble, cheddar, or Monterey Jack)

For Serving

  • ½ cup halved cherry tomatoes
  • Chopped cilantro
  • Sour cream, salsa, and guacamole

Instructions

  1. Prepare the Air Fryer Basket: Place a piece of parchment paper at the bottom of the air fryer basket to prevent toppings from falling through and to make removing the nachos easier.
  2. Layer the Chips and Toppings: Arrange half of the corn tortilla chips in a single layer on the parchment paper. Evenly distribute half of the diced bell peppers, jalapeño, red onion, black olives, and shredded cheese over the chips.
  3. Repeat the Layer: Add the remaining tortilla chips on top, followed by the remaining diced vegetables, olives, and shredded cheese, creating two layers of nachos.
  4. Air Fry the Nachos: Set the air fryer to 330°F (about 165°C) and cook the layered nachos for 5 minutes, or until the cheese has melted and the top layer of chips is starting to brown.
  5. Garnish and Serve: Remove the nachos carefully from the air fryer basket. Top with halved cherry tomatoes and chopped cilantro. Serve immediately with sour cream, salsa, and guacamole on the side.

Notes

  • Do not overfill the air fryer basket; two layers work best in a 5.8-quart basket to ensure even cooking and prevent toppings from getting too close to the heating element.
  • If your air fryer is smaller, reduce the recipe by half or cook in batches.
  • Line the air fryer basket with parchment paper even if it’s non-stick for easier cleanup and to keep toppings from falling through.
  • Use thicker cut corn tortilla chips as they can better support the toppings without breaking.
