Sauce and Garnish
- 1 tablespoon unsalted butter
- 2 medium shallots, thinly sliced
- ¼ cup (50 g) light brown sugar, packed
- 3 tablespoons freshly squeezed lemon juice (from about 2 medium lemons)
- 2 large Honeycrisp apples, cored and sliced into ½-inch slices
- Fresh thyme sprigs, for garnish
- 1 medium lemon, sliced for garnish
Instructions
- Pat chicken dry. Season both sides. Use paper towels to thoroughly pat the chicken thighs dry, then evenly season both sides with Italian seasoning, paprika, chili powder, kosher salt, and freshly ground black pepper to infuse flavor.
- Heat olive oil in skillet. Cook chicken, then transfer to plate. Warm the extra virgin olive oil in a large skillet over medium heat. Add the seasoned chicken thighs and cook for 6 to 8 minutes on each side until golden brown and the internal temperature reaches 165°F. Remove the chicken and place it on a plate; tent with foil to keep warm.
- Melt butter. Cook shallots. In the same skillet, melt the unsalted butter over medium heat. Add the thinly sliced shallots and cook for 2 to 3 minutes, stirring occasionally, until they soften and begin to caramelize, developing a rich flavor base.
- Add brown sugar and lemon juice. Sprinkle the packed light brown sugar into the skillet along with the freshly squeezed lemon juice. Stir well, scraping up any browned bits stuck to the pan to create a flavorful sauce as the sugar melts and blends with the lemon juice.
