Instructions
- Make dressing: In a small bowl, whisk together honey, whole grain mustard, Dijon mustard, 2 tablespoons of olive oil, and minced garlic until fully combined and smooth.
- Marinate chicken: Place the chicken breasts in a large bowl, pour half of the dressing over the chicken, and toss to coat evenly. Cover and refrigerate for at least 1 hour, preferably overnight, to allow flavors to penetrate.
- Cook chicken: Heat 1 teaspoon of olive oil in a non-stick skillet over medium heat. Once the oil is hot, add the marinated chicken breasts. Cook the first side for 3 to 4 minutes without moving the chicken to develop a nice sear.
- Finish cooking chicken: Flip the chicken, cover the skillet, and cook for about 6 minutes more or until the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and transfer to a plate; tent with aluminum foil and let rest for 5-10 minutes to retain juices.
- Cook bacon: While the chicken rests, carefully wipe the skillet mostly clean and return it to medium heat. Add the diced bacon and cook, stirring occasionally, until the bacon is crispy, about 8 to 10 minutes. Remove bacon with a slotted spoon and drain on paper towels.
