  • 1–2 nori sheets, chopped or crumbled into small pieces
  • 1 large avocado, peeled and sliced

  • 1/4 cup low-sodium soy sauce, for serving
  • Nori Furikake, for garnish

Spicy Mayonnaise

  • 1/4 cup Japanese mayonnaise
  • 2 teaspoons sriracha

Instructions

  1. Cook the Sushi Rice: Rinse the Calrose sushi rice under cold water until the water runs clear to remove excess starch. Combine the rinsed rice and 2 cups of water in a medium saucepan. Bring it to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes, or until the water is fully absorbed. Remove from heat and let it stand, covered, for 10 minutes to finish steaming.
  2. Prepare Spicy Mayonnaise: While the rice is cooking, whisk together Japanese mayonnaise and sriracha in a small bowl until smooth and well combined. Set aside.
  3. Season and Cool the Rice: Gently fold the 1/4 cup seasoned rice vinegar into the cooked sushi rice. Spread the rice out on a plate or baking sheet to cool slightly to room temperature for better texture and flavor.
  4. Assemble the Bowls: Divide the seasoned sushi rice evenly among four serving bowls. Top each bowl with the chopped imitation crab, diced cucumber, and sliced avocado in an appealing arrangement.
  5. Add Spicy Mayo and Garnishes: Drizzle the prepared spicy mayonnaise over the toppings in each bowl. Sprinkle chopped nori sheets, black and toasted sesame seeds, and Nori Furikake evenly over each bowl for added flavor and texture.
  6. Serve: Serve the sushi bowls immediately with low-sodium soy sauce on the side for dipping or drizzling to enhance the flavors according to taste.
