For the Lentils (Dal Base)

  • 1 large yellow onion, thinly sliced

For the Seasoning (Chhonk / Tadka)

  • 1 tablespoon cumin seeds
  • 4 dried red chiles
  • ¼ teaspoon red chile powder
  • ¼ teaspoon asafetida (optional)

Instructions

  1. Cook the Lentils: Rinse the urad dal thoroughly under running water. Place in a deep skillet with salt, turmeric, and enough water to cover the lentils. Bring to a boil, then reduce heat to a gentle simmer and cook uncovered until the lentils are soft and most of the water has evaporated, about 30-40 minutes. Let it rest briefly before stirring in the fresh lime juice.
  2. Caramelize the Onions: Heat olive oil in a large frying pan over medium heat. Add the thinly sliced onions and cook slowly, stirring occasionally to prevent sticking. Continue cooking for about 8 to 10 minutes until the onions are deeply golden brown and sweetly caramelized. Avoid rushing this step for optimal flavor development.
  3. Prepare the Seasoning (Tadka): In a small saucepan, heat ghee or olive oil until hot. Add cumin seeds and toast them until fragrant and sizzling. Then add dried red chiles, red chile powder, and optional asafetida. Stir for a few seconds until the spices bloom, then immediately remove from heat to prevent burning.
  4. Assemble the Dish: Spoon the cooked lentils into a serving dish and spread evenly. Layer the caramelized onions over the lentils. Carefully pour the hot seasoning mixture (tadka) over the top. For best presentation and flavor, do not mix immediately; allow the flavors to settle before serving.
