Instructions

  1. Preheat the Oven: Preheat your oven to 400°F (204°C) to prepare it for baking the queso fundido later.
  2. Cook the Chorizo: Heat a large oven-safe skillet, such as a cast iron pan, over medium-high heat. Add the ground chorizo sausage and cook for about 4 minutes, breaking it up into small pieces to ensure even browning.
  3. Add Vegetables and Continue Cooking: Add the diced yellow onion and finely diced jalapeno pepper to the skillet with the chorizo. Cook for an additional 4 to 6 minutes, stirring occasionally until the chorizo is fully cooked and the onions soften. Drain and discard excess grease, reserving about ¼ cup of the cooked chorizo mixture for topping later.
  4. Add Cheese and Prepare to Bake: Spread the cooked chorizo evenly in the skillet, then sprinkle the shredded Monterey Jack cheese over the top. Add the reserved chorizo mixture on top of the cheese layer to add extra flavor and texture.
  5. Bake Until Cheese Melts: Place the skillet in the preheated oven and bake for 10 to 12 minutes or until the cheese is melted, bubbly, and slightly golden on top.
