Main Ingredients
- 8 oz bacon (chopped, divided)
- 1/4 cup sour cream
- 16 oz cream cheese (room temperature)
- 1/2 cup Mexican cheese (shredded, 4 cheese blend)
- 1 1/4 cups cheddar cheese (shredded and divided)
- 1/4 cup green onions (chopped and divided)
- 1/2 cup walnuts (chopped and divided)
Seasonings
- 2 to 3 Tbsp Ranch seasoning (add to taste)
- 1/2 tsp garlic powder
- 1/4 tsp ground black pepper
- 1 1/4 tsp poppy seeds (divided)
Instructions
- Cook the Bacon: Cut the bacon into small pieces and sauté in a pan over medium heat until fully cooked and crispy. Once cooked, set aside a quarter of the bacon pieces for the topping and allow the rest to cool.
- Mix the Cheese Base: In a mixing bowl, combine three-quarters of the cooked bacon, sour cream, cream cheese at room temperature, Mexican four-cheese blend, one cup of shredded cheddar cheese, three tablespoons chopped green onions, one-quarter cup chopped walnuts, three tablespoons Ranch seasoning, garlic powder, black pepper, and one teaspoon poppy seeds. Use a wooden spatula to mix all ingredients thoroughly until uniformly combined.
- Prepare the Topping Mixture: Finely chop the reserved quarter portion of bacon, remaining cheddar cheese (one-quarter cup), one tablespoon green onions, and remaining walnuts (one-quarter cup). Mix these together with the remaining quarter teaspoon of poppy seeds to create the outer topping mixture.
- Form and Coat the Cheese Ball: Shape the cheese mixture from step two into an even ball. Roll the ball over the prepared topping mixture from step three, coating it completely to form a decorative and flavorful outer layer. Serve immediately or cover and refrigerate until ready to serve.
