Instructions

  1. Make dumpling filling: Place the ground chicken in a large bowl. Add the light soy sauce and Shaoxing wine, then mix thoroughly using chopsticks until the liquid is fully absorbed and the meat becomes sticky. Cover with plastic wrap and refrigerate to marinate while preparing other ingredients.
  2. Prepare filling mixture: Add grated ginger, minced green onions, grated carrot, drained corn, salt, cornstarch, white pepper, and sesame oil to the marinated ground chicken. Stir well until all ingredients are evenly combined.
  3. Prepare dumplings: Prepare a small bowl of water. Take a dumpling wrapper and wet its edge with water. Place about 1 tablespoon of filling in the center of the wrapper. Fold and seal the edges tightly by pressing them together; you can pleat or fold as you prefer to ensure a good seal. Cover wrapped dumplings with a damp paper towel to keep them from drying out.
  4. Freeze dumplings (optional): If not cooking immediately, place wrapped dumplings on a baking tray, cover tightly with plastic wrap, and freeze for up to 1 month. After 24 hours, transfer frozen dumplings to a sealed zipper bag to save freezer space.
  5. Cook dumplings: Heat 1 tablespoon of peanut or vegetable oil in a nonstick skillet over medium heat until hot. Add dumplings in batches without overcrowding. Pour 2 tablespoons of water, cover the skillet, and steam dumplings for 2–3 minutes if fresh or 4 minutes if frozen. Remove the lid and continue cooking until the bottoms turn golden brown and crisp.
  6. Serve: Serve dumplings hot with Chinkiang vinegar, dumpling dipping sauce, or homemade chili oil on the side for dipping.
