- Boil the pasta: Fill a large pot with salted water and bring it to a rolling boil. Add the penne pasta and cook according to package instructions until al dente, usually around 10-12 minutes.
- Reserve pasta water: Before draining the pasta, pour out and reserve about one cup of the starchy cooking water using a heatproof measuring cup. This water will help create the creamy sauce.
- Drain and combine: Drain the pasta thoroughly and return it to the empty pot off the heat. Add the entire package of Boursin Fine Herbs & Garlic cheese and top with a few tablespoons of the reserved pasta water.
- Toss to combine: Using two spoons, gently toss the pasta with the cheese and water until the sauce is smooth and coats the pasta. Add additional pasta water a little at a time to reach your desired creaminess.
- Add spinach: Stir in the fresh baby spinach, tossing continually until the spinach is evenly distributed and lightly coated in the creamy sauce.
- Let spinach wilt: Cover the pot with the lid and allow the pasta to rest for 1-2 minutes off the heat so the spinach wilts and the flavors meld together.
