Ingredients
Scale
Polenta
- 18 oz (510g) Pre-cooked Polenta Log, sliced into 1/2 inch rounds
Seasoning & Toppings
- 3 tbsp (45ml) Extra Virgin Olive Oil
- 1/2 cup (50g) Parmesan Cheese, finely grated
- 1 tsp (2g) Dried Italian Herbs (oregano, basil, thyme)
- 1/2 tsp (3g) Garlic Powder
- Sea Salt, to taste
- Black Pepper, to taste
Instructions
- Preparation: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Slice Polenta: Cut the pre-cooked polenta log evenly into 1/2-inch thick rounds, laying them out flat for even cooking.
- Seasoning: Whisk together the extra virgin olive oil and garlic powder. Using a brush, coat both sides of each polenta round with the garlic olive oil mixture. Season them with sea salt and black pepper to taste for balanced flavor.
- First Bake: Arrange the polenta rounds on the prepared baking sheet. Sprinkle evenly with grated Parmesan cheese and dried Italian herbs. Bake in the preheated oven for 15 minutes, allowing the bottoms to turn golden and start crisping.
- Flip and Crisp: Carefully flip each polenta round to the other side. Optionally add more Parmesan cheese if you want extra cheesiness. Return them to the oven and bake for an additional 10 to 15 minutes to crisp the other side.
- Broil Finish: For a final touch, switch your oven to broil and broil the polenta rounds for about 1 minute. This step creates deep golden-brown, charred edges that add texture and flavor—watch closely to avoid burning.

- Adjust garlic powder and salt according to your taste preference.
