  • Author: anna
  • Total Time: 30 minutes
  • Yield: 24 cookies 1x

Description

Classic Danish Butter Cookies that are melt-in-your-mouth delicious with a delicate buttery flavor and crisp texture. These cookies are piped into beautiful shapes, chilled for perfect consistency, and baked until lightly golden at the edges. Perfect for gifting or enjoying with tea or coffee.

Ingredients

Scale

Cookies

  • 1 cup (227 g) European salted butter, room temperature
  • 1/2 cup (100 g) granulated sugar
  • 2 egg yolks
  • 2 teaspoons (10 g) vanilla extract
  • 2 cups (220 g) all-purpose flour
  • 1/2 cup (50 g) cake flour

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper to prepare for baking the cookies.
  2. Cream Butter and Sugar: In a stand mixer, cream the room temperature butter until smooth. Gradually add the granulated sugar and continue mixing until the mixture is light and fluffy, ensuring air is incorporated for a tender texture.
  3. Add Wet Ingredients: Add the egg yolks and vanilla extract to the creamed butter mixture and mix until well combined, creating a smooth batter.
  4. Combine Flours: In a separate bowl, whisk together the all-purpose flour and cake flour to evenly distribute and prevent lumps.
  5. Incorporate Flour: Gradually add the flour mixture to the wet ingredients in the mixer, mixing until fully incorporated and a soft dough forms.
  6. Pipe Dough: Transfer the dough to a piping bag fitted with a star tip. Pipe the cookies onto the prepared baking sheets, spacing them about 2 inches apart to allow for spreading.
  7. Chill Cookies: Place the piped cookies in the refrigerator and chill for 20-30 minutes. Chilling helps the cookies maintain their shape while baking.
  8. Bake Cookies: Bake the chilled cookies in the preheated oven for 10-15 minutes until the edges are lightly golden, indicating they are done.
  9. Cool: Remove the cookies from the oven and transfer them to wire racks to cool completely before serving or storing.

Notes

  • Using European salted butter enhances the cookie’s rich flavor due to its higher butterfat content.
  • Chilling the piped cookies is essential for preventing excessive spreading during baking and achieving crisp edges.
  • You can substitute cake flour with all-purpose flour for a slightly different texture, but cake flour helps keep the cookies tender.
  • Store cookies in an airtight container at room temperature to maintain freshness for up to one week.
  • For variety, sprinkle a little coarse sugar on top before baking for added crunch and sweetness.
