Ingredients
Scale
Pasta and Protein
- 16 ounces medium pasta shells
- 6 slices thick-cut bacon
Vegetables and Cheese
- 1 ½ cups dill pickles, chopped
- 1 ½ cups cheddar cheese, diced
- ¼ cup green onions, diced
Dressing
- 1 ½ cups mayonnaise
- 1 cup sour cream
- ¼ cup dill pickle juice (plus extra ¼ cup for tossing pasta)
- 1 ounce packet ranch seasoning
- 1 tablespoon fresh dill, chopped
Instructions
- Cook Pasta: Bring a large pot of water to a boil. Add the medium pasta shells and cook according to the package instructions until al dente. Drain the pasta, rinse it under cold water to stop the cooking process, and set it aside to cool.
- Prepare Bacon: Heat a large skillet over medium-high heat. Add the thick-cut bacon slices and cook until they become crispy. Remove bacon from the skillet, chop into bite-sized pieces, and set aside.
- Make Dressing: In a medium bowl, combine mayonnaise, sour cream, ¼ cup dill pickle juice, ranch seasoning packet, and fresh chopped dill. Mix thoroughly until the dressing is smooth and well blended.
- Toss Pasta with Pickle Juice: Place the cooled pasta into a large bowl, add an additional ¼ cup of dill pickle juice, and toss well to evenly coat the pasta, enhancing its tangy flavor.
- Combine Salad Ingredients: Add the chopped dill pickles, diced cheddar cheese, green onions, chopped bacon, and the prepared dressing to the bowl with the pasta. Toss everything together gently but thoroughly to ensure even coverage of all ingredients with the dressing.
- Chill and Garnish: Cover the pasta salad and refrigerate it for at least 2 hours to allow the flavors to meld. Before serving, garnish with extra dill pickles and fresh dill for added brightness and presentation.
Notes
- Make sure to rinse the pasta with cold water after cooking to prevent it from sticking and to cool it down for the salad.
- Use thick-cut bacon for added texture and flavor in the salad.
- For best flavor, chill the salad for at least 2 hours, but it can be made a day ahead.
- If fresh dill is not available, dried dill can be used but reduce the amount by half as it is more concentrated.
- Adjust dill pickle juice amounts to taste depending on your preference for tanginess.
